Hacienda Guantupi, located in La Maná area of the province of Cotopaxi, we chose to make our 100% bar, for its delicate flavor and creamy texture.
This haven of peace and cocoa is located in the province of Cotopaxi, in the heart of Ecuador, at a height of 700 meters above sea level where you breathe fresh air and live with wild birds. This hacienda is literally a cocoa jungle, it has Leafy and healthy trees that have formed their own ecosystem where the insects and animals of the area cohabit in harmony.
Once the pods are ripe they are harvested, and at that moment the magic begins, the cocoa sees the light for the first time, and just as when a child is born, an emotion and rejoicing floods the eyes of the farm workers, who in They soon take care of cocoa, like a tender child, and take it to the fermentation tables, where a “ruma” or mountain is made with the cocoa and it is covered with jute bags in order to separate it from the air, so that it can be carried anaerobic fermentation takes place, where the micro-organisms do their work, they first heat the grain so that it does not suffer from cold, this rise in temperature encourages us, because it indicates that we are doing things well, but it also alerts us carefully, because We cannot let the temperature rise too much, that is why Don Manuel, sits near the cocoa to have a glass of fresh tamarind and when he is lifting, he uncovers the cocoa and carefully stirs it, using his wooden stick, this makes the ox Ígeno greet the grain, slowing down anaerobic fermentation and lowering the temperature.
These are three days of intense care, just like caring for a newborn, with the same dedication and a feeling of honor and joy as when you know you are doing things well.
On the fourth day, the cocoa is taken to the farm, it has left the cradle of childhood, now it is ready to receive sun and breeze, which will be its school and university to enlist it to undertake a trip to our factory to be the protagonist of our bar. 100% cocoa.
